From the makers of our bestselling Bunka knife comes the Tosa Kajiyamura brand sashimi knife. This is a long and thin knife used in the Japanese kitchen to prepare sashimi, sushi, and sliced raw fish and seafood. A sashimi knife like this is designed specifically for razor thin cross cutting resulting in smooth, shiny and sharp slices. 

Tosa forged blades boomed during the early Edo period, under the Reformation of Genna of 1621. During the reformation people of Tosa carried out projects such as procuring lumber and promoting the development of rice fields, which increased the demand for high quality agricultural and forestry tools. In modern day Tosa (an area centered around the Kochi prefecture), blacksmiths use some machinery in the forging process but retain the skills and traditions passed down from the Edo period.
