Story

This small copper grater is known as an oroshigane, a tool unique to Japanese cooking. Traditionally used for small aromatics — like ginger, garlic, yamaimo, radishes, citrus, and wasabi — they’re quite different from Western-style graters. This type of Japanese grater lacks any perforations, and produces a very fine result that’s somewhat closer to a microplane. This particular grater is handcrafted from a thin sheet of copper, hammered for strength before being cut into shape and plated with tin. From there, the teeth are raised one-by-one in a style that’s been in use since the Edo period. Beloved by chefs and other professionals, this Copper Grater is an invaluable addition to any serious cook’s kitchen.
